Christmas Fruit Cake ( Gluten Free)
Organic ingredients. A month of patience. A little Christmas magic.
Christmas begins a little earlier in my kitchen. A generous blend of prunes, raisins, sultanas, pineapple, cherries and stem ginger is soaked in dark rum and ruby port for at least one month, allowing the fruit to become plump and deeply infused with flavour.
I then bake each cake with organic buckwheat and oat flours, organic eggs and butter, ground almonds, fragrant orange zest and warming Christmas spices. A little dark muscovado sugar and molasses bring a rich caramel depth, letting the fruit’s natural sweetness shine.
Rich, moist and full of festive character, this is a cake to savour slowly - with afternoon tea, after Christmas lunch or shared as a thoughtful gift.
Available to preorder in three sizes:
6-inch: approximately 6–8 generous portions.
8-inch: approximately 12–14 generous portions.
10-inch: approximately 16–20 generous portions.
Portions depend on slice size.
Available with fruit soaked in dark rum and ruby port, or in orange and pineapple juice for an alcohol-free alternative.

Each Christmas Fruit Cake is made to order and requires a minimum of one month’s advance notice to allow the fruit to develop its wonderful depth of flavour.
